Beginning this week, a new “dim sum” section has been added to the Wu Hu menu, providing a new place for dim sum in Las Vegas. The menu includes some of Chef’s favorites including the Chives Cake, the steamed Xiao Long Bao (Soup Dumplings), and a unique Turnip Cake, which reminds us of the best hash-brown patty you’ve ever had.
Chef Ray — who grew up in Hong Kong — has held various positions in Las Vegas, including Executive Chef at Wynn Resorts and Luxor, Assistant Chef de Cuisine at Caesars Palace, and oversaw the culinary operations of three Asian restaurants at Palms: Tim Ho Wan, Fortune, and Little Buddha.
If you are also interested in trying some of Chef’s specialties, we also recommend the new “Chef’s Special Wok” section of the menu. Here, you will find new entrées that everybody is raving about — including the Candied Walnut Shrimp and the Black Pepper Beef Ribeye.
What is Dim Sum?
Dim sum is a large range of small Chinese dishes that are traditionally enjoyed in restaurants for brunch. Most modern dim sum dishes are commonly associated with Cantonese cuisine, although dim sum dishes also exist in other Chinese cuisines. Similar to the way that the Spanish eat tapas, dim sum dishes are shared among family and friends.
WuHu Noodle at Silverton Casino brings you authentic Asian recipes and traditional favorites. Locals know that this is the place for noodles in Las Vegas. Chef Nick comes to us with a wealth of culinary experience; most recently from Aliante Hotel & Casino where he held the same role. Prior to Aliante, Chef held leadership positions at JW Marriot Resort in Summerlin, Caesars Palace, and various other properties in the Midwest.
Culinary has been a passion of Chef Nick since his first job as a bagel baker at Bagel Café in Las Vegas. In fact, he likes to pop in the café frequently to taste some of his favorite recipes that has been served since the restaurant opened.
Chef Nick is also a huge Raiders fan and has seen them play in three different stadiums: Soldiers Field in Chicago, Coliseum in Oakland and here at Allegiant Stadium in Las Vegas.
One of his proudest moments? When he was working at RAO’s restaurant, Chef Nick won a burger challenge at Caesars Palace against all the chefs at the resort. His entry was the perfect Italian burger — a beef and veal burger with thick cut of fresh mozzarella cheese, roasted red pepper aioli and arugula, served with cherry peppers and kettle chips. That same recipe was published in a cookbook from the owner the restaurant, called “RAO’s on the Grill with Frank Pellegrino Jr.”

We agree with their assessment that Su Casa is a “hidden gem” restaurant in Las Vegas, and Chef Shayne is one of the most brilliant sushi chefs in town.
Says Chef in the article:
“I’m a sushi freak. I test recipes at home. Always trying to keep up with the trends. Watch sushi chefs from Japan on YouTube every night… I don’t feel like my job is a job. I wake up every day loving what I’m doing. It’s zen for me. It calms me. It’s relaxing. During service is like an orchestra, everything just flows. I love being artistic with my sushi.”
See the article about sushi Chef Shayne Galan here.
Su Casa offers trendy and traditional Asian coastal cuisine with a Latin influence. Add a little spice to your rice with sushi that’s good for the soul. This dynamic union of cultures and cuisine marries refreshing favorites like ceviche, sashimi, sushi rolls, ramen, and poke bowls. Good times are destined to be shared, so bring a friend to your home for great sushi.

“The best strawberry dessert this side of the Rocky Mountains.”
Strawberry Tall Cake — our take on strawberry shortcake — has been offered at Silverton Casino since Day One. Since then, we have served nearly one hundred thousand Strawberry Tall Cakes desserts. One of our most popular items, they are still on the menu today at Sundance Grill.
One food critic described it as “the best strawberry dessert this side of the Rocky Mountains.” After one bite of this perfection, you may wonder what they are serving on the other side of the mountains.
In honor of Silverton’s 25th anniversary, the cake is being offered for $2 on Tuesdays throughout the month of July, with the purchase of any entrée at Sundance Grill.
