What is Chateaubriand?

The new DATE NIGHT MONDAY promotion at Twin Creeks steakhouse features Chateaubriand on the menu. It sounds fancy… exactly what is it?

According to The Daily Meal:

Chateaubriand (pronounced shah-toe-bree-ond) is a dish and a preparation method originating in 19th-century France. It is a steak roast typically weighing about 1-2 pounds, between 3 and 4 inches thick, and sourced from the center cut of the beef tenderloin. This roast, intended to serve two to three people per serving, is generally incorporated as part of a celebratory occasion.

It may be tempting to say that beef is beef, but anyone who has sampled a ribeye side by side with a filet mignon will understand that the cut of the meat matters where the flavor is concerned. This fact is particularly so with the Chateaubriand. Because of its relatively high fat content and the fact that it comes from a muscle that doesn’t do a lot of exercise, its texture practically melts in your mouth. It has a mild beefy flavor but doesn’t have an overly aggressive minerally aftertaste like other cuts. Additionally, because this cut of steak gets treated like a roast and baked in the oven, it generally gets caramelized on the outside, giving it a nutty, umami-rich exterior juxtaposed with the slightly sweeter, juicy interior.

The bottom line:  Chateaubriand is the perfect date night entrée for two to share.

Dim Sum in Las Vegas

Chef Ray Kwong, the new Executive Chef at WuHu Noodle, is passionate about dim sum!

Beginning this week, a new “dim sum” section has been added to the Wu Hu menu, providing a new place for dim sum in Las Vegas.  The menu includes some of Chef’s favorites including the Chives Cake, the steamed Xiao Long Bao (Soup Dumplings), and a unique Turnip Cake, which reminds us of the best hash-brown patty you’ve ever had.

Chef Ray — who grew up in Hong Kong — has held various positions in Las Vegas, including Executive Chef at Wynn Resorts and Luxor,  Assistant Chef de Cuisine at Caesars Palace, and oversaw the culinary operations of three Asian restaurants at Palms: Tim Ho Wan, Fortune, and Little Buddha.

If you are also interested in trying some of Chef’s specialties, we also recommend the new “Chef’s Special Wok” section of the menu.  Here, you will find new entrées that everybody is raving about — including the Candied Walnut Shrimp and the Black Pepper Beef Ribeye.

  • Sundance Grill, named Best Breakfast Spot in Las Vegas by the Weekly, is also a great place for late-night dining.  The restaurant is now open until Midnight seven nights a week.

Meet New Executive Chef at WuHu Noodle

Silverton welcomes Chef Ray Kwong, the brand new Executive Chef at WuHu Noodle.

Ray spent his early years in Hong Kong, where his passion for cooking began at an early age while watching his mother cook.

He has held various positions in Las Vegas, including Executive Chef at Wynn Resorts and Luxor,  Assistant Chef de Cuisine at Caesars Palace, and oversaw the culinary operations of three Asian restaurants at Palms: Tim Ho Wan, Fortune, and Little Buddha.  (Incidentally, the original Tim Ho Wan was awarded a Michelin Star.)

Chef is excited to be become part of our amazing team at WuHu and looks forward to building on the restaurant’s success.
