This is the second in a series of posts that feature “under the radar” menu items at Silverton’s Las Vegas restaurants.
Our chefs are big fans of the house-made buratta, which is served at Sundance Grill with grilled bread as an appetizer, and alongside fresh tomatoes and watermelon in the Caprese salad.
“While many restaurants out there might offer buratta, we actually make ours fresh in our kitchen,” said Chef Ashley Archer. “When you consider the volume that we serve, this speaks to the pride that we take into our work and being in true control of the final outcome.”
Chef Ashley is particularly proud of the “scratch kitchen” philosophy that he and his team live by. “Would it be easier to buy this product?” he asked. “Sure! But there is a true feeling of accomplishment when you take raw ingredients that are sourced from the best vendors. We take pride in knowing our buratta is better than any other that you might have tried.”
“It’s this particular road map that has allowed us to stand apart, while staying relevant to our guests as they join us on this culinary journey,” the chef said, with a twinkle in his eye.
Burrata is a rich, creamy Italian cow’s milk cheese, with an exterior that resembles fresh mozzarella. But – surprise! – you’ll find an ooey, gooey mixture of cream and small cheese curds inside, with an delightful silky texture. It’s the perfect complement to crunchy, grilled bread, which is exactly how we serve it at Sundance.
Sundance Grill at Silverton Casino is one of the best Las Vegas restaurants. Specialties include country-fried steak and eggs, prime rib with creamy horseradish, towering pancake stacks and more. The restaurant serves breakfast, lunch, dinner or late night.
