This is the first in a series of posts that feature “under the radar” menu items at Silverton restaurants.
With such an innovative menu, it took Chef Shayne Galan a moment to identify the most “under the radar” item on the menu at Silverton’s Su Casa sushi bar: the Uni Lobster Fried Rice.
This made-to-order item brings together traditional wok-fired fried rice, fresh lobster, egg-infused uni, and vegetables, and is topped with fresh uni.
“The savory fried rice, freshness of lobster and the creaminess of uni brings fireworks to your taste buds in every bite,” he said.
Pronounced ooh-knee in Japanese, it is known as a sea urchin in English. This exotic ingredient is a delicacy in Japan, where it is still considered to be an aphrodisiac. Often found on sushi, the thick, creamy, rich, and buttery texture of uni is experiencing a surge in popularity, and this umami-rich ingredient has recently been found on the menus of the trendiest restaurants.
The Uni Lobster Fried Rice is found on the Hot Plates menu at Su Casa, one of the best sushi restaurants in Las Vegas. Other “under the radar” items on the Las Vegas sushi menu include the Yakitori Chicken Skewers, the Miso-Glazed Seabass, and the Tuna Tataki.
